Did you know that your toddler needs to consume as much
fiber as an adult woman does? That is 25 grams per day. I know this can be extremely challenging to
get your little kiddo to eat this much but here is an easy way to get a lot of
fiber in them. I was given this bran muffin recipe after I had Wes and have
used it periodically since then. I use this recipe as my base and always try to
add new things. Sometimes I add pureed squash, sweet potatoes, chopped up
carrots or spinach. This recipe is flexible so you can really throw in
anything.
I absolutely love the cereal that I use within the muffin. I
just wish Wes would eat it plain. This cereal contains 14 grams of fiber in one
serving and no sugar. That is half of what we all need per day.
Here is the recipe:
FIBER MUFFINS
1 ½ c any bran/fiber cereal
¾ c milk
2 medium ripe bananas
½ c melted butter
1/3 c honey
1 large egg
1 ¼ c flour
1 T baking powder
½ t salt
375 for 25 min
*put bran cereal in milk first and allow to soak for 5 min
